PASTA WITH TOMATO SAUCE

This meal is easy to make and serves 3 to 4 people. I found the recipe in one of my cook books and I cook it often. The meal consists of chick peas which is a source of proteins and that is why it is so good for vegetarians.

INGREDIENTS:

225g pasta
1 sliced onion
1 seeded and sliced red pepper
2 tbsp olive oil
400g can chopped tomatoes
425 g can cheek peas
oregano, bay leaf, salt and ground black pepper

PREPARATION:

  1. Boil the pasta.
  2. Fry the onion and pepper in the oil for about 5 min until softened.
  3. Add the tomatoes, chick peas with their liquor and herbs.
  4. Season and bring to a boil then simmer for about 10 min.
  5. Lastly remove the bay leaf and mix with pasta.
