MUSHROOM SOUP

This original recipe came from my mum. Of course she would prepare this soup with piece of meat but I always use vegetable stock instead. The best mushrooms for this soup are dried wild mushrooms but button mushrooms are perfectly fine. Wild mushroom soup always was prepared for Christmas Eve, mmm... Home Sweet Home.

STIR FRY AUBERGINE

This modification of Chinese stir fry is delicious and can be served with boiled rice. The meal is a little bit spicy because of Chinese black beans which can be bought in any Chinese shop.

PASTA WITH TOMATO SAUCE

This meal is easy to make and serves 3 to 4 people. I found the recipe in one of my cook books and I cook it often. The meal consists of chick peas which is a source of proteins and that is why it is so good for vegetarians.
