STIR FRY AUBERGINE

This modification of Chinese stir fry is delicious and can be served with boiled rice. The meal is a little bit spicy because of Chinese black beans which can be bought in any Chinese shop.

INGREDIENTS:

2 tbsp oil
1 sliced aubergine
2 sliced diagonally spring onions
1 crushed garlic clove
1 sliced red pepper
1 tbsp Chinese salted black beans
Ground black pepper

PREPARATION:

  1. Heat the oil in the wok and stir fry the aubergine for 2 minutes.
  2. Add the onions, garlic and pepper and cook for another 2 min.
  3. Later add black beans and cook for further 1 min.
  4. Season with ground pepper.
